- 2 cups grated zucchini (squeezed dry)
- 2 cups chopped apples (Gala or Honeycrisp recommended)
- 1/2 cup vegetable oil
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup brown sugar (for frosting)
- 1/4 cup softened butter (for frosting)
- 1–2 tablespoons milk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine grated zucchini, chopped apples, vegetable oil, brown sugar, eggs, and vanilla extract. Mix until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If using nuts, fold them in now.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- While the bread cools, prepare the frosting by mixing brown sugar, butter, and milk until smooth. Once the bread is cool, frost the top and serve.
Notes
Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to 3 months, sliced for easy servings.
