Ingredients

  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy. Beat in the egg and vanilla extract.
  3. In another bowl, mix together the rolled oats, flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in the diced apples gently.
  5. Drop spoonfuls of the dough onto a greased baking sheet, leaving space between each cookie. Bake for 12-15 minutes until golden brown around the edges.
  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
