- 3–4 lbs beef shoulder roast
- 2 cups apple cider
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tablespoon olive oil
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef shoulder generously with salt and pepper, then sear it until browned on all sides.
- Remove the beef and set aside. In the same pot, add onion, garlic, carrots, and celery; sauté until tender, about 5-7 minutes.
- Pour in the apple cider, scraping the bottom of the pot to deglaze it. Simmer, then return the beef to the pot with thyme and bay leaves, cover, and braise in the oven for 3-4 hours.
- Carefully remove the pot from the oven, discard the herbs, slice the beef, and serve hot.
Notes
Choose a well-marbled beef shoulder for the best flavor. Let the beef rest after braising for at least 10 minutes before serving.
