- 1 cup shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Begin by heating the vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp to the skillet and cook until they turn pink and opaque, around 2-3 minutes.
- Push the cooked shrimp to one side of the pan, pour the beaten eggs into the other side and scramble until fully cooked.
- Next, add the mixed vegetables into the pan and stir-fry for another 2 minutes.
- Add the cooked rice and soy sauce to the skillet, mixing thoroughly until everything is heated through.
- Season with salt and pepper to taste, and stir in the sliced green onions before serving.
Notes
For best results, use day-old rice and customize vegetables as desired.
