Delightful scallops seared to perfection in a fragrant garlic and lemon sauce.
Ingredients

- 1 pound scallops
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon butter
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. The oil should shimmer but not smoke.
- Season the scallops generously with salt and pepper.
- Add the scallops to the pan and cook for about 2-3 minutes on each side until they are golden brown and cooked through.
- Remove the scallops from the pan and set them aside on a plate.
- In the same pan, add the butter and minced garlic, cooking until fragrant (about 1 minute).
- Stir in the lemon juice and let it simmer for a minute.
- Return the scallops to the pan, and toss to coat them in the garlic lemon sauce.
- Remove from heat and garnish with fresh parsley before serving.
Notes
For best results, use fresh scallops and ingredients. Store leftovers in an airtight container in the refrigerator for up to 2 days.
