Description

A quick and flavorful shrimp fried rice dish made with tender shrimp, colorful vegetables, and delightful seasonings, perfect for busy weeknight dinners.


Ingredients

  • 1 cup shrimp, peeled and deveined
  • 3 cups cooked rice (day-old is best)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, chopped
  • 2 eggs
  • 23 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the sesame oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Add the shrimp to the skillet and cook, stirring frequently, until they turn pink and opaque, about 3-4 minutes. Push shrimp to one side of the skillet.
  3. On the other side of the skillet, crack the eggs and scramble until fully cooked, about 1-2 minutes.
  4. Add the cooked rice and mixed vegetables. Stir to combine shrimp, eggs, rice, and veggies. Pour in soy sauce and mix well.
  5. Add chopped green onions, salt, and pepper to taste. Stir for an additional 2-3 minutes until heated through.

Notes

Use day-old rice to prevent the fried rice from becoming mushy. Customize vegetables according to preference.
