Description
A quick and mouthwatering Pad Thai that combines rice noodles with shrimp or chicken, crunchy bean sprouts, and creamy peanut butter, all drizzled in a zesty soy-lime sauce.

- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 cup cooked shrimp or chicken
- 1 cup bean sprouts
- 2 green onions, chopped
- 3 tablespoons soy sauce
- 2 tablespoons peanut butter
- 1 tablespoon lime juice
- Crushed peanuts and lime wedges for serving
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Push garlic to the side, pour in the beaten egg, scramble until set, then mix into garlic.
- Stir in cooked shrimp or chicken along with the drained noodles.
- Add bean sprouts, green onions, soy sauce, peanut butter, and lime juice, then toss well.
- Cook the mixture for an additional 2-3 minutes until heated through.
- Serve hot, garnished with crushed peanuts and lime wedges.
Notes
For a vegetarian version, substitute shrimp/chicken with tofu and use soy sauce alternatives. You can also add more vegetables as desired.
